Why We Throwdown

Tonight at Jubala we're hosting a TNT! TNT stands for Thursday Night Throwdown; feel free to come out and party with us. The event starts at Jubala around 7pm.

Here at the shop we've gotten a good bit of interest, along with a lot of questions. If you're curious about what the event entails, come check it out. Now, Iet's talk a bit about why these events even exist in the first place.

Many of us treat coffee like a drug. We walk into a cafe and walk out with a dose of caffeine that doesn't resemble something delicious at all. Thursday Night Throwdown is an event that promotes the opposite. Instead of a drug dose, look for drinks that are made well. Latte art is a skill that only committed baristas learn. If the only concern is to hand someone a speedy caffeine shot, then why spend time on presentation? Throwdowns cultivate a coffee culture that respects presentation and quality.

At Jubala, we want to focus on high quality coffee drinks. Tonight we'll be celebrating high quality drinks with some great baristas who celebrate the same. Come join us!

We've decided to go with a non-logo hanging sign to put over the door on the courtyard side of Jubala. We like the simplicity of coffee co. (which we are) so we played with the words a little and came up with something that I think will look sharp in, what I hope will be, a fun filled courtyard at Lafayette Village. The Honeycutt Rd. side will get a fascia sign with our full logo over the door.

we're also playing around with some cool ideas for the glass doors on both sides

I got to spend the past week in Kiawah, SC with some of my best friends, and had an absolute blast! I can't think of a more relaxing place to be to kick off, what will be, an exciting 2011. On the ride back to Raleigh we stopped in Charleston to grab Sunday brunch at Hominy Grill.

(GO AND ORDER THE BIG NASTY ASAP!)

When leaving, Kelley and I wanted to stop by this place we noticed earlier in the week on St. Phillip St., between Spring and Cannon streets. The straightforward "COFFEE" sign caught our attention and pulled us in. The name of the shop is hope and union and our 30 minute date was the perfect treat. Their concept is similar to Jubala's - offer handcrafted, single-origin coffees, thus slowing down the brewing process resulting in a richer, cleaner cup of coffee. The owners, relocated from New York, remodeled and added on to an older row home in the Cannonborough neighborhood of downtown Charleston. hope and union offers teas and coffees from Intelligentsia and Stumptown and will also prepare the traditional espresso drinks on their beautiful La Marzocco Linea. I wish them all the best going forward, and will definitely make it a priority to visit when traveling to or through Charleston in the future.

The Cappuccino

My mother likes her steaks extra well done and my brother enjoys ketchup on everything. If we were to go to a nice restaurant I would encourage my mother to try her steak medium (medium rare is too much of a push for her) and tell my brother to trust the flavor of the food and skills of the chefs. Although they ultimately lose out on the natural "goodness" of the steaks, they still pay full price and enjoy their food the way they like it. The waiter may make his or her own suggestion but will still cook the food the way my family wants it and collect at the end of the night.

James Hoffman (past World Barista champion) gives his take on what constitutes a cappuccino. The current coffee giants have redefined a cappuccino, and most other drinks as well thus creating confusion throughout the industry of how to exactly prepare each drink. My attitude is to offer what I think taste best for the customer and if the customer isn't happy, then we need to attempt to make their experience better. Several owners would disagree with me on this saying that we should correct and educate but I think you can do that and still give the customer what they want. For instance, we will serve our cappuccino in a 6.5 oz mug (2 oz espresso, 2 oz steamed milk, 2 oz froth) explaining that a traditional cappuccino is prepared in thirds, but I will also be open to tailoring the drink to the individuals preference. My goal is to offer what the customer ultimately wants but to also encourage them to try new things.

The plumbing has been trenched and the concrete poured. The cold weather and freezing temperature we've had recently delayed the concrete a little but we are rolling right a long now. Many of you have been following this blog from the very beginning and have been as patient as I am to see this development and Jubala come to fruition. Jubala has been designed, the equipment has been picked out, and the city has approved and issued a buildout permit. There are still a couple minor things to be ironed out but hopefully we can get the hammers swinging soon and get this place opened.

Thoughts on Instant Coffee (VIA)

coffee that dissolves in water? It just seems weird. Kool-aid is different because it's a sugar, which when put in water the molecules break down and form new bonds with each other. Coffee shouldn't do this. Come to find out, your Starbucks VIA coffee isn't fresh coffee grounds after all. Ask the guy at the counter next time you're in and he'll tell you that VIA coffee is microground coffee that dissolves in hot water....then tell him this..."Actually it's not made of fresh coffee grounds, it's made of dehydrated brewed coffee." In other words it's coffee that has already been brewed and then dried out to form solid crystals...which can then be dissolved in water.

Big Lights Will Inspire You

CoffeeFest New York is coming up this weekend and as nerdy as it sounds, I am pumped. I guess when you become passionate about something you look forward to learning as much as you can about it. I went to the Specialty Coffee Convention last year in Atlanta and had a blast. It is a great way to learn more about the industry and meet with the leaders in the business. We want to bring the best to the Raleigh market and challenge ourselves to continually pursue cups of excellence.

Things are moving forward very nicely with the shop and still anticipate having an opening sometime this summer. I have been playing around with the syphon brewing method for over a year now and have had a lot of fun with it. Jubala Village Coffee will incorporate this method of coffee brewing into the bar to make things a little bit more exciting and entertaining....and because it makes a great cup of coffee. The Lafayette development is rolling forward nicely and I think I have nailed down a great architect and designer, so things are certainly going great.

I'm off to Africa today...and will try to provide updates while I am there for the next couple of weeks. If not, then I am sure I will have plenty to share when I come back....it is their peak coffee season right now. I will be in Nyeri, Kenya and Yirgacheffe, Ethiopia for most of the trip. I'm Going to Africa!

Finally!....I have been trying to go back to Kenya, Africa for awhile now. I had a trip planned about 2 years ago but the country experienced tribal unrest after accusations of voter fraud were raised in the presidential election between President Kibaki and Prime Minister Odindga. Things have calmed down there so I am getting ready to go back. I'll be gone from Nov. 18 - 30 and will travel specifically to the coffee farms in Nyeri, Kenya at the foot of Mount Kenya and will stop in Yirgacheffe, Ethiopia for a few days on the way back. A lot of the coffee served at the shop will come from these areas, mostly from small farms and cooperatives. My goal for this trip is to meet the farmers, their families, and the villages they live in. The idea of Jubala Village Coffee originated with a trip to this part of the world in 2001 and building strong relationships with these producers will be a main priority going forward.

Plaster is going up on the outside of the shop and work on the last building is underway. This building will be twice as tall than the other buildings and will have retail on the bottom and office space on the top floors. Over Labor Day weekend I had a chance to travel down to Charleston, SC to see some of my good friends from Wake Forest. It was a trip I had not planned on going on until just a couple of days ago when I got a call from my buddy Charlie telling me he was going to propose to his girlfriend, Katie...yeah girl. Congrats guys! I had a lot of fun. While down there I decided to take advantage of the gorgeous weather and be a tourist for the day before traveling back to rainy NC. I knew there were several good coffee shops down there so I was going to try and visit a few. Everyone left early but Charlie and Katie joined me for some coffee and bagels at City Lights Coffee on Market Street. I wasn't a big fan of the setup but the coffee was really good. They actually serve Counter Culture Coffee, the same roaster used for Jubala, and business was steady during the time that we were there. Kate and Charlie left so I got out my camera and backpack and just started walking around the city. It was great! I managed to find a couple of interesting coffee shops while walking around. BAKED, which is located on East Bay St. near the Battery and Waterfront Park was the first place I visited. They served Stumptown Coffee, which I was surprised about because they are a west coast roaster...but after talking to some of the employees they reminded me that Stumptown had just opened up a new place in NYC. BAKED was first opened in 2001 in New York City by a couple of guys, a few ovens, some mixers, an espresso machine, and a lot of passion. Although the coffee was good, it was definitely more of a bakery place than coffeeshop but seemed to be busy the 30 minutes that I was there.
I found another place that I had actually heard a lot of good things about from several people. The place is called KUDU coffee and it is closer to the College of Charleston campus just off King St. I walked in and ended up walking out without ordering anything. The place was packed with students, which was the main reason why I left, but it was also 100% African themed which I thought was kind of strange.
I took a lot of other fun pictures too while walking around Charleston but they have nothing to do with coffee so I will not post them here. I will update progress on Jubala soon...it is still moving along...just very very slowly!

Iced Coffee

Just a little heads up....I was in Wilson, NC today for a meeting and stopped in the Starbucks. I wasn't in the mood for anything hot so I just ordered a small iced coffee. The price kind of made me laugh...$2.03. If I would had ordered it hot instead of cold it would've cost $1.64. To me this is funny because it actually cost them less to make the iced coffee than to brew a hot cup. I asked them how they made their iced coffee. The lady told me they make it the same way they make their hot coffee except they just cool it over ice and put it in the refrigerator and use it the rest of the day. I smiled as she looked at me with this look as if I had just asekd a stupid question.
I smile because it doesn't make any sense to pay more for coffee that has been sitting in the refrigerator all morning, and then is poured over a half cup of ice, getting less coffee. In a lot of places they actually just put their left over coffee in pitchers and let them cool in the refrigerator. To me I should pay less when I am getting less. Just a point. From a business end I understand, they have a higher profit margin with their Iced Coffee, but come on, at least make it fresh!

We will be offering our Iced coffee fresh using a Chemex pourover.

it tastes like coffee

That is what I first thought of when I started drinking coffee. Coffee tastes like......coffee. It all tasted the same to me. So I would just add sugar and milk until I slowly acquired a taste for coffee. Then I started branching out, trying new things, visiting different places, and attending coffee cuppings. A coffee cupping is actually similar to what people do at wine tastings...put about 4 different coffee origins beside each other and based on the fragrance, aroma, brightness, flavor, body, and aftertaste, determine what you like best. Yes coffee can be and is that complex....at least if it is made properly. Here is a chart that people in the coffee industry use to determine different elements of coffee origins. A lot goes in to making a good cup!

The top entrance will go into the perimeter parking lot and the bottom entrance will flow into the courtyard where more seating will be available under two lighted oak trees. I am working with Ron Cox, an architect in Raleigh, to design the main bar feature as a focal point of the shop. I'll put up another plan that will better explain it when I work out the details. Hopefully by the end of next week.

I have some more pictures! These are a few photos of the coffee bar being used downtown for City Lights, an outreach in downtown Raleigh at All Saints Chapel. The history of this place is captivating, so I will make a follow up post about it. Below the Chapel is a large, open floor plan, basement, where we set up a coffee bar and gave away coffee. I poured two coffees using a couple simple, micro-brew methods. While everyone enjoyed the coffee, I believe the crowd favorite was the Kenyan Auction Lot prepared using the TruBru pour over. I also served a new favorite of mine, the Burundi (small country south of Rwanda and west of Tanzania), using two Bodum French Presses. It was a lot of fun! Also at the end of the slideshow are some updates on the site. The steel of my building just started to go up today.

Lafayette is moving ahead fast...and so am I. Over the past few days I have had a chance to meet with several people in regards to Jubala. I sat down with the architect and engineers of the project, bouncing several ideas off of them. I left the meetings satisfied, knowing that we were all on the same page. The space has changed a lot and I believe the public will be pleased when the final renderings are finished. If not, then back to the drawing board. We will be incorporating ideas inspired from several places. Think "community." I hope to have a new website soon, or atleast an update to the existing one, because a lot has changed since the oringial site launched. In the meantime I will continue to post layouts, pictures, and ideas on this blog when the files are ready....stay tuned!

No - this is not going to be an economics lesson but, like the economy, we can look at coffee from many different angles. Dark vs. Light, South American vs. African, Organic vs. ...not?, Washed vs. Unwashed, Course vs Fine, Regular vs. Decaff, Drip vs. Pressed, Espresso vs. Brewed, Fair trade vs. Unfair Trade (?) <--a subject I will touch on later, Hot vs. Cold, and Macrobrew vs. Microbrew. These are some of the reasons why my passion for coffee continues to grow. There is just so much to learn from a single seed. Maybe that is why the gospels contain so many parables on seeds. Anyways, lets take a closer look into macro vs micro, specifically in the brewing process.

My concept of brewing was once limited to ground coffee, a filter, and an automatic brewing machine. I mean coffee is coffee, everything tastes the same right? I have slowly realized that wasn't the case. I never thought that I would be able to sip a brewed cup of coffee and have an idea of where it was grown and how it was prepared. Well the how it was prepared part is a stretch, but maybe one day. I have learned that there are two basic ways to brew coffee. Macrobrew - large batch brewing, and Microbrew - small batch brewing. Starbucks macrobrews if that helps. For coffee, macrobrewing would be grinding and brewing large batches in those large, stainless steel, commercial machines you typically see at most coffee shops. This is a good technique to use when a shop is busy (mornings) to manage the lines. Americans don't like to wait when they are expecting something quickly. The downside to macrobrew is that some customers get fresh coffee and some get the coffee that was brewed 30-45 mins before they pay for it. It all depends on when you get in line. Microbrew is more of a brew to order method specific to a customers taste. The french press, pour over (post below), and vacuum or siphon pot are ways some shops and individuals choose to use the microbrew technique. There are several reasons as to why I prefer micro over macro. The coffee is always fresh, the customer can choose any type of coffee that is available, there is little to no waste, and most of all it is fun. I mean some people like letting machines do all the work but I don't find much excitement in pushing an orange button and waiting. Microbrew usually involves some hand on action and it is a great way to build community with your customers.

At Jubala we will incorporate both, macro during the morning rush and micro available all day. More than likely we will have a few different stations. Our espresso station to make those tasty shots and latte based drinks, a french press and pour over station (similar to what 3cups does) , and a vacuum pot station (look at video clip in Blue Bottle Coffee post below). These will all be on the front bar counter giving the staff opportunities to engage with the customers. The boring macrobrew machine will be on the back counter to be used during those busy morning rushes (at least that's the idea).

I have been looking at a lot of different ways to manually prepare coffee. I have nothing against automatic brewing or using machines to get the job done but there are so many other ways to work with coffee. During my visit to Atlanta I ran into a representative for a simple manual drip system called TruBru. You don't see these much on the east coast, or at least in North Carolina (I can only think of one place), but they are normal out west. I am getting one and putting it to good work!

Things have been crazy lately...but have been going great. I have been traveling a lot, meeting a lot of people, and picking up some really innovative ideas, but have not been updating Juballer. I traveled to Atlanta a couple weekends ago for the annual Specialty Coffee Exposition and World Barista Championship. Although I traveled solo for this trip, I had a lot of fun and learned a lot. Hopefully I will be able to attend next years in Anaheim. I have several posts that I have been working on but haven't published yet. That tends to happen more frequently than I wish.

I did want to share a website that I stumbled across. I have been in contact recently with a group in Colorado called Cold Orange Media. The site speaks for itself, and I think they do great work. They pointed me to a website of a group they have been working with for a few months now. I am still learning more about them, but they seem to have a mission similar to that of Jubala's. Light Gives Heat has two projects, SUBBI and EPOH. The SUBBI project works with a group of 60 women in a village of Uganda paying them a sustainable income to make handcrafted jewlery to be sold in the states. The pictures on the site tell the story themselves and bring back some great memories. I am interested to learn more about the EPOH project. According to the site this is a project with a different village that creates bags, scarves, and textiles. I love people with passion!

So I just finished reading a couple of really good books. The authors concepts are great for small business entrepreneurs who strive for excellence in their local communities. I especially enjoyed reading the stories of how real people and businesses flourished in their local economies and analyzing the path that made them great.

Small Giants by Bo Burlingham

I especially like Bo's chapter called, "The Mona Lisa Principle," where he describes how every community has its own character. He describes small giants as businesses that are so "intimately connected to the place where they're located that it's hard to imagine them being anywhere else." He goes on to say, "The companies' owners and employees have a strong sense of who they are, and where they belong, and how they're making a difference to their neighbors, friends, and others they touch."

Deep Economy by Bill McKibben

I found myself agreeing and disagreeing with Mr. McKibben is this book, but I still thought it was a good read. He tended to take some of his concepts to an extreme but he still managed to offer rich details of local economies across the world.

We will talk about this in a future post. I did want to introduce a coffee company that I have been following for sometime now....Stumptown Coffee in Portland, Oregon. In fact they are king of coffee with 5 locations in Portland and 2 more in Seattle, Washington. You do not find many places like this on the east coast.

I have been getting a lot of questions about the shop but have noticed that most of the questions have been asked with a puzzling and surprised toned...at least from those that have known me for awhile. Usually when someone approaches me and asks, "You're opening a coffee shop?," I usually end up with a smile and a simple nod...yes. Not because I think it's a funny question but because I know I am about to get hammered with several follow ups. The intuitive look on the faces are great...and I love explaining and sharing what I like to call my coffee passion....That's why I think it serves to take a step back and mention just where this passion came from.

I am currently teaching a Sunday school class to a group of 10th grade guys and this past Sunday we spent some time talking about where our desires come from and what are the things that we are passionate about. Boats, hockey, science, engineering, politics, law, and "I don't know" were the responses. Seven different answers, and I am surprised not one of them said girls. I think they were really thinking hard about their answers. I shared with them the different passions I have had growing up, and the strong desire to go into the medical field when I was their age. That desire stuck with me through high school and into my first years of college...I even finished all the pre-med classes at Wake Forest and ended up majoring in Biology, but never did apply to medical school. While the description of a doctor still fascinates me today, I simply do not have the passion to be a practicing physician. I still have a similar desire but just a different direction.

Desire is a key word in my life. Psalm 37:4 tells me that I should "delight [my]self in the Lord and He will give [me] the desires of [my] heart....but wait, I also have desires when I do not delight myself in the Lord. So where do those come from? I think this verse was a critical turning point in my life. I started to differentiate the desires in my life and gain a firmer understanding of how to sort God's will in my life from my own free will. I had just started my senior year at Wake, and I was supposed to know what I was going to do when I graduated...after all, everyone else did. I was clueless...but I knew I was changing course. I became somewhat independent and began to soak in what the psalmist explains in the first part of that verse...delighting myself in the Lord. To someone who is not a christian, this may be strange, maybe almost even taboo, but to me it was real and still is today. A lot of my desires have been desires that I have created out of envy, greed, idolatry, recognition, or fame. While they are still real desires, they are desires that tend to lead me into dead ends because they cause me to stand on my own understanding of what would be best for me. The last five years, while I've stumbled a few times, I have learned the importance of delighting first then waiting on my desires instead of flipping it and seeking my desires first. With that said, two desires have grown and began to brew in my heart...no pun intended. Africa and Coffee. I was introduced to Africa, specifically the eastern, Sub-Saharan countries, by a friend of mine in high school and have been fascinated with the land and people ever since. I've had opportunities to travel to several of the countries in this region and interact with the people. While on my second trip to Kenya, after the culture shock subsided, I began to take a keen interest in the social and community structures of the country. The people lived on what the land gave them and depended on a strong harvest each growing season. This was where my passion for coffee was ignited. Coffee and tea are the two main commodities exported out of the country each fiscal year and play a large part in the lives of the people. The idea for Jubala Village Coffee is to bring these two passions together. To serve and perfect one of the lands richest commodities while socially helping those that produce it. I hope this helps explain a little bit of why I am starting this venture, but I would still encourage you to ask! After all, it is my passion.

Warmer Days

So my old room mate (who got married this past weekend) thought it was strange that I was opening a coffee shop but didn't own a coffee machine for the house. Yes, I would agree with him, that is strange....but what he did not know, because he was never at the house, was that I make my coffee at home differently. I should first note that I don't drink coffee or espresso for the quick jolt of caffeine that it may give you. Therefore I hardly ever drink it first thing in the morning. Although I am learning other methods, there are a couple of ways I like to brew my coffee at home. French Press and Vac Pot. I like the French Press because I can make enough coffee for a cup or two, and because it by far gives the best taste when made right! The only drawback with the french press is the residue left at the bottom of the cup when the entire press is poured. The funnest way (in my opinion) to make coffee is using the vac pot method. This brings me to the purpose of my post. I am far from even getting close to perfecting this method but it has been a hit at the house when I make if for friends. The vac pot not only makes a great cup of coffee, but it also creates an entertaining way to engage conversation around coffee. I am posting a link to a youtube video that shows a shop in San Francisco called Blue Bottle Coffee using this technique.

I would say they are well on their way to perfecting the vac pot. They use halogen lights to heat the water which then siphons up into the top chamber where the brewing takes place. After a minute or so of brewing the pot is pulled off the heating source and the coffee filters back down into the bottom chamber and is then poured. The device I have at home is much less sophisticated than what these guys use but 1/500 the the cost. My vac pot put me back $40, so you do the math! (hint: multiply my cost by 500)

Chilly Days

I think the cold weather caused me to go into hibernation these past few months. Just because I do not update the site doesn't mean that everything has stalled. In fact things are moving forward nicely. Lafayette has finished construction of the underground parking and they've started the steel framing. I will post pictures of the development soon. There is still not an accurate date of when construction will cease, but it should be at least 9 more months. I hope the doors will be wide open before Christmas...

In the mean time, I have been having a lot of fun researching and planning for Jubala. While I have a good grasp of my concept, I am always looking for ways to improve it. After all this is a business. I have learned a lot from Counter Culture Coffee, our coffee roaster. They are well respected in the the coffee industry and strive for coffee excellence... a concept I am very fond of. CCC is based in Durham and roast for a few specialty coffee shops around the Triangle. One of my favorite spots is 3 Cups in Chapel Hill. http://www.3cups.net/

This place has become a local favorite to those living in and around Chapel Hill. They serve five or six coffee origins daily, all from Counter Culture Coffee. There are several ways they make their coffee. You will not find the brewing equipment that most are used to here. Instead of brewing large batches of coffee every hour in automatic brewing machines, they go a different route. If you need a cup to go, they most likely will make a cup using a drip cone technique. This process involves ground coffee, a porcelain drip cone, a filter, hot water, and your "to go" cup. The filter is placed in the porcelain cone and the ground coffee is then dropped in. Hot water and gravity do the rest. Water is poured into the filter and the coffee filters through the cone right into your cup. Easy concept, yet entertaining to watch.
If you decide to stay you have the option to order a french press. They combine the coffee and hot water in one of four french press sizes and give you a tray with the french press, a sand timer, and a warm mug. When the timer is done you push down on the press, pour, and enjoy. There are many other reasons why I enjoy 3 Cups, but I encourage you to visit yourself!

Everyday I ride by the Lafayette Development wondering when construction is going to pick back up. I've been in contact with the development and it seems that they have been waiting on financing from their lender. Yes the economy is down and times may seem difficult but it is still important to move forward and not backwards. That is exactly what Lafayette is doing....Yesterday the News and Observer released an article in the business section on the development. They even mention the coffee shop. Wow! sorry I have not updated the blog in awhile. Honestly I didn't know anyone read about us and the coffee shop but have recently been asked by several friends why I haven't posted any new updates. We are still moving along with things and while it may be in slow motion, the ball is still rolling forward. We meet with the development later this week to discuss construction timelines. Hopefully by this weekend we will have a better understanding of when we will open. We wanted to attach a drawing of a possibility of what the inside layout may look like. I, Andrew, visit many coffee shops, mentally taking note of what works and what doesn't. While I am no architect, I am fascinated by the concept of restaurant design and the utilization of space. Yes Starbucks is king but there is not much about it that I like, atleast when you've been to other community coffee shops. This first design option is a bar design that Ron Cox help me design. There are two main entrances. One side faces the parking lot for the early morning crowd to quickly get in and out. The other entrance opens to the courtyard to accomadate those looking for a relaxing afternoon or evening getaway under the three large oaks. Let us know what you think....you won't hurt our feelings!

Jubala’s Story

Jubala Village Coffee is a business venture where caring individuals representing diverse backgrounds have come together in hopes to launch a self sustaining company while giving back to the communities around them. Andrew and Jeff Cash have a history of giving their time, energy, and resources to those who need it most. When Andrew and Jeff returned home from trips to Africa, India, Mexico, and other third world countries in 2004, they both agreed that it was their common desire to create a profitable company grounded in the desire to give. After approaching Philip Rogers, a graduate student at the UNC-Chapel Hill School of Government, and Emily Cash, also a graduate student at UNC-Chapel Hill, the group began discussing (in 2005) the feasibility of launching a coffee company with the social responsibility to give back to the communities around them. Bill Chiaravalle of Brand Navigation (http://www.brandnavigation.com/) heard and shared the same ideas of these four individuals. In 2006, Chiaravalle acted on this vision and developed the brand, Jubala Village Coffee. Since early 2006, the group of five have planned, researched, and pitched their concept to individuals in the Raleigh community. The team plans to open the doors of the first Jubala Village Coffeehouse in early 2009 in Raleigh, NC.

Jubala’s Plan

Jubala Village Coffee will work with their roaster, Counter Culture Coffee (http://www.counterculturecoffee.com/), to produce unique, high quality coffee and espresso based drinks for the North Raleigh community. The goal of Jubala and Counter Culture Coffee is to provide a unique coffee experience while educating it’s consumers on the social impact their purchases make on the communities in which the coffee comes from. Jubala and Counter Culture take pride in the quality that goes into every drink served to its market. Ranging between the sun-dried tradition of drip coffee from Yirgacheffe, Ethiopia to a flavorful raspberry mocha served in a porcelain mug and topped with a dollop of cream, Jubala will take the necessary steps to produce a memorable product for this underserved North Raleigh market. Andrew and Jeff agree with Counter Culture Coffee in that they have a responsibility both to consumers and to the growers. A portion of the profit Jubala makes off each coffee blend will go back into helping the specific region in which that coffee comes from. This may include helping the farmers learn better farming practices, providing villages with valuable economic resources such as water and food, or helping the local people get better access to education to help spur them past their economic struggles. The sub-saharan region of Africa offers some of the richest and flavorful coffee origins from around the world, yet this region is also considered to be an area hardest hit with economic struggle. By providing high quality coffee and having a social responsibility, Jubala Village Coffee will be a leader in the North Raleigh specialty coffee market.
The coffee provided through Counter Culture Coffee is highly regarded not only in the Raleigh/Durham area but also all along the east coast. Currently CCC roasts for downtown Raleigh favorite, Helios, recipient of several best coffee awards, Chapel Hill’s well known 3 Cups, and Abraco, recently named by New York Times as New York’s best cup of coffee.

Jubala’s Key to Success
The key to Jubala’s success is educating a market of white collar men and women about how their purchases can help benefit those around them and those in the world who are less fortunate. Raleigh, North Carolina is consistently named one of the best places to live and do business. The city of Raleigh is considered one of the fastest growing cities in the country with most of its growth occurring in the northern part of the city. The state’s capital city is nestled in the center of North Carolina just hours from both the mountains and the beach. Raleigh is also unique in that it is surrounded by some of the nation’s top public and private universities and teaching hospitals.
These attributes along with the mild climate and close proximity to Research Triangle Park are some of the reasons that attract so many men and women to live and work in our state. Recently, North Raleigh has become a popular place to live and raise families for the white collar businessmen and women of the Triangle. Jubala’s market will primarily consist and cater to those individuals that live in the surrounding North Raleigh neighborhoods and those individuals using Falls of the Neuse Road and I-540 as the main traffic arteries to and from work. The new I-540 interstate, connecting Research Triangle Park to US-64 in Zebulon has provided the boom in growth occurring in North Raleigh. The first Jubala Village Coffeehouse (Lafayette Development) will be on the corner of Falls of the Neuse Road and Honeycutt Road at the I-540 exit. While North Raleigh is a great birthplace for Jubala, the owners of this company wish to expand their company throughout the South East United States.

So today we are meeting with the architect of the development and a restaurant supply house to talk about how we are going to outfit our space. I am not sure if this takes any sort of decorating skill, but if it does Jeff and I may need get close and personal with our feminine side, which will probably be much easier for Jeff than myself. When we get a chance to scan the dimensions of the inside of the space we will post it on here so you too can let the decorator in you go to work. I am going to put a link to the Lafayette development website on here as well ( http://www.lafayettevillageraleigh.com/ ). Our space is the second spot from the left in Building B. It will have two main entrances. One entrance will face Honeycutt road and the other entrance will open into a green courtyard that will serve as the main outdoor dining area for the development. The idea with this location is take advantage of both morning and afternoon/evening traffic. In the morning most of our customers will park closer and enter through the Honeycutt entrance, grab what they want (pay of course), and then either stay or leave for work. In the afternoon/evening we anticipate more of our customers using the other side taking advantage of the beautiful landscape and architecture that the development will provide. Then again we have no clue what to expect. I don't even know what I am going to do when I start my own day, so it is hard for me to predict how other people will use our spot. So start thinking about how you would design your own coffee shop and let us know if you have any good ideas.

Before you ask what a Juballer is let us inform you that this is not a title that we came up with on our own. Actually we aren't really sure where it came from but since we have started using it we have been hooked. It's kind of like when you go to pound fists with someone instead of shaking their hands - You have no clue when and where you were first introduced to the fist pounding practice, but somehow it has subconsciously become apart of your typical greeting. For us, Juballer is and has been used in the same way. Juballer is actually a compound. You know - when two words are pushed together to form one new word. In this case we not only pushed two words together, but we got crazy and dropped a few letters as well. You'll understand soon. Take for instance another great compound word created by the great Chad Hood (www.thinkingchad.blogspot.com) and yours truly - "Churffee". What do you get when you put church and coffee together (?), a delicious cup of churffee.

So getting to our point and the purpose of this welcome post to the Juballer blogger. We (Jeff and Andrew) refer to each other, and every now and then the people dear to our hearts, as Juballers. Juballer is the compound of Jubala and baller. This would probably be the best time to introduce another new word/concept to you as well, "Jubala." Jubala is the name of the coffee house we are opening in North Raleigh (hopefully around Dec 08). Pause, re-read...yep that is correct, with neither of us ever taking a course in entrepreneurship we heard God's calling and decided to be obedient and take the financial dive into the free enterprise system called capitalism. We could go on and on in details about what Jubala is going to be like, but to be quite honest we still aren't sure. Two years ago our coffee house concept was very different than it is today, and our plans are constantly changing and adjusting everyday. Thus the purpose of this blog is to help track our progress in the next year towards opening and update you, our friends, on the evolution of Jubala. But back to the second part of Juballer, baller. Baller is a term used, and actually may no longer be that 'hip' of a word, to describe someone that does something ridiculously well. Originally it referred to basketball players that made it off the streets and into the NBA, but is now more broadly used. Lets face the truth though: 1) we are just a couple of average twenty something white guys that know nothing about being cool or how to use correct street terminology, and 2) neither of us really do anything ridiculously well enough to be given the title "baller". But in our own world, just to make each other feel better, we find comfort in calling each other, "Juballer."
